This area is famous for the olive oil: the AOP (Appellation d’Origine Protégée, Controled designation of origin in English) « Vallée des Baux ». The AOP guarantees the quality and the origin of the oil. It is the largest area for the production of olive oil in southern France with 15% of the national olive oil production. To get the AOP, the authorized olive varieties are Salonenque, Beruguette, Grossane, Verdale and Picholine. Making olive oil is quite similar to the process of making wine: you can have an infinity of different oils, depending on the variety, the blends and on how you process the varieties.

To learn more about the process, it’s fun to tour a an olive oil mill and discover the different steps of the making process. Of course, it is the best quality: extra virgin and first press.
